Chipotle Salad Dressing

A smoky, delicious, and creamy Chipotle Salad Dressing is made with mayonnaise, canned chipotle peppers with adobo sauce, lime juice, and fresh minced garlic. It is a delicious dressing that can double as a chipotle mayo spread and is delicious on shrimp cakes, a keto chipotle burger, chicken salad, and more.

One of the great things about being a mom who loves to cook, is to see your children love to do the same thing. My youngest son has worked in the food industry for several years now. And, he always comes home with some great ideas for us to try right at home.

Recently, he made shrimp cakes for dinner. I loved them so much, I had to make them myself to blog about here! However, we also decided that we wanted to add a chipotle mayo dressing to accompany it. This chipotle salad dressing turned out so delicious we have used it on fish sticks, burgers, and even breakfast sandwiches. It has already become a mainstay in the fridge.

What You Need To Make Chipotle Mayo Dressing

Mayonnaise is the base of this salad dressing. This is the mayo we use and in my opinion, it is the best there is out there. 

Chipotle Peppers with Adobo Sauce are basically ripe (red) jalapeno peppers that have been smoked and dried. They are often sold in a can with adobo sauce. These peppers can pack a punch, so start small and add on as your tastebuds allow.

Fresh Garlic offers another flavor bite to this dressing. I always mince mine with a garlic press to be sure I get all the flavor I can from the juices in the clove.

Fresh Limes are best and I always juice my own with my favorite juice reamer. I use a fine mesh strainer to separate the pulp and seeds from the lime.

Ingredient Substitutions

  • Substitute Greek Yogurt for the mayonnaise
  • Use a combination of sour cream and mayonnaise
  • Add 1 tablespoon finely chopped cilantro
  • Substitute 1/2 teaspoon garlic powder for the garlic cloves
  • Substitute lemon juice for the lime juice

Ingredients

  • 1 cup mayonnaise
  • 2 canned chipotle peppers chopped fine
  • 2 tablespoons adobo sauce
  • 2 garlic clove finely grated
  • 2 teaspoons honey
  • ½ tablespoons fresh lime juice

Instructions

  • Add the mayonnaise, chipotle peppers, adobo sauce, garlic, honey, and lime juice to a medium sized mixing bowl. Stir until completely combined. Store in the refrigerator up to 1 weeks.
