Strawberry Vodka Mojito

Local New York Strawberries, the first of the season, come together with a mint simple syrup, vodka, and club soda to make this delicious and summery drink – the Strawberry Vodka Mojito!

When I was setting up to make this drink and to take my photos, I pulled out my trusty old fashioned glass to use. I walked away from my set and when I came back I see the NY Yankees glass in its place! Grumpy had decided that my drink needed to be served up in his glass. I couldn’t not use his glass after that but I did drink the drink you see, not Grumpy!

On our way home from shopping recently, Grumpy and I stopped at a local strawberry stand. The first of New York Strawberries were out and I wanted to get some for us to have over the weekend. There is something about getting your fresh produce locally grown. It makes everything tastes better!

The first time I made this beverage I used fresh raspberries (pictured below) and used sugar to muddle the mint in the glass. I would use raspberries again but I didn’t like the pieces of muddled mint floating around in my drink nor the fact I had sugar settled at the bottom of my glass. This time I made a mint simple syrup similar to the basil simple syrup I made for the Blueberry Basil Cosmopolitan.

Simple syrup is definitely the way to go. That way when you make your drink, you can just float a piece of mint on top for looks if you must, but it’s not needed. The fruit is definitely a treat when you get to the end of your treat and strawberries or raspberries are perfect for this drink.

When making your drinks be sure to use the right amount of liquid ratio for each ingredient. I have the OXO Nesting Measuring Beakers that I use those to measure most of my liquid and I use a measured liquor dispenser for my liquor that measures both 1 and 1-1/2 ounces.  Love both of those products immensely!

Once you’ve measured your liquids into the glass, added your ice and gave it a stir, you will top it off with some club soda, serve garnished with a strawberry, lime slice and mint (if desired).

This beverage was not too sweet (just right) and has that fresh lime flavor that I absolutely love. You can adjust the sweetness of your beverage by adding more simple syrup if desired. There is no real fruit flavor in this from the strawberry (or raspberry) but they do add a pretty tint to the beverage and are an absolute treat to have at the end of your drink. Mix, stir, enjoy!

Serves: 1 beverage
  • 1-1/2 ounces vodka
  • 1 ounce fresh squeezed lime juice
  • 3 ounces mint simple syrup (use a little more if you like sweeter)
  • club soda
  • strawberry slices
  • lime slices for garnish
  • mint for garnish
  • To make Mint Simple Syrup:
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup packed mint leaves
  1. Make your simple syrup, combine sugar and water in a small saucepan over medium heat. Bring to a boil, stirring until sugar has dissolved. Remove from heat and stir in mint leaves. Cover and let steep for 15 minutes. Strain through a sieve into a smaller bowl and discard leaves. Let cool. If making for later use, store in refrigerator.
  2. To make beverage: To your glass, add vodka, lime juice and simple syrup. Add ice and stir. Add strawberry slices then top off with club soda.
  3. Makes 1 beverage.

    I think the secret to a good cocktail is the measurements. This recipe looks like a very refreshing cocktail for a Summer’s evening. Nice to see a variation on the classic Mojito recipe.
