Place the beef-less beef in a large skillet that has been sprayed with cooking spray. Break the crumbles up and cook and stir for 2 minutes, or until it is warmed thru.
Add the taco seasoning to the beef-less beef and stir to combined. Remove from heat and keep warm.
Reheat the cauliflower rice in the microwave or in a skillet until warm.
Assemble the burrito bowl by placing ¼ of the cauliflower fried rice in a serving bowl. Top with ¼ of the beef-less beef, diced tomatoes, roasted red peppers, avocado slices, and cucumbers.
Garnish the burrito bowl with a tablespoon of sour cream, chopped cilantro, and cheddar cheese.
