Instructions
Preheat waffle iron.
In a small bowl, sift together flour, baking powder, and salt.In a separate bowl, whisk together the egg yolks, milk, and oil until mixture is smooth.
In a large bowl, using a hand mixer on medium to medium-high speed, beat egg whites until stiff peaks form.
Add the wet ingredients to the dry ingredients and mix until combined.Using a large rubber scraper, gently fold egg whites into pancake batter.
Spray pre-heated waffle iron with non-stick cooking spray.Scoop waffle batter into bottom of hot waffle iron. Cover and cook until golden.
