Heat the olive oil In a large skillet over medium-high heat until hot. Add the onion and cook for 1 minute, stirring occasionally.
Place beef in skillet with onions and crumble beef using a meat masher. Season with salt and pepper and cook for 7 minutes, until beef has browned and is cooked through. Drain any excess grease from the ground beef pan and discard.
While meat mixture is cooking, toast buns, cut side down, on a hot griddle until golden brown.
Remove ground beef mixture from heat and stir in the diced pickles, thousand island dressing, and cheddar cheese.
Place bottom bun on a plate and scoop ½ cup filling on the bottom bun, top with shredded lettuce and the top bun.
