While oven is heating, chop potatoes, dice onion and prep peppers. Spray sheet pan with cooking spray.
In large bowl, mix together maple syrup, mustard, salt, pepper, and apple cider vinegar.
Add chopped vegetables to the maple syrup mixture and toss to coat.
Spread vegetables out on sheet pan and make room in the center of vegetables to place pork tenderloin.
Remove pork loin from package and place on sheet pan in center of veggies. If using the applewood smoked bacon pork tenderloin, be sure bacon side of pork loin is up.
Roast in oven for 30 minutes or until temperature of pork reaches 165 degrees using a meat thermometer.
