1 ¾ cup flour
⅔ cup sugar
2 teaspoon baking powder
1 teaspoon salt
1 large egg
⅓ cup oil
⅔ cup milk
⅓ cup drained crushed pineapple (small can)
¼ cup fruit preserves

Instructions

Preheat oven to 400°F.
In a large bowl, mix together flour, sugar, baking powder, and salt.
In a 2 cup glass measuring cup, whisk together egg, oil, milk, and pineapple.
Add wet ingredients to dry ingredients, and stir until just combined.
Spoon batter into muffin cups until ½ full.
Top each muffin with a teaspoon of jam preserves.
Bake for 20minutes.
