Preheat oven broiler. Season the boneless chops with salt, black pepper, and garlic powder.
Heat the olive oil in a large skillet over medium-high heat until hot.
Sear the pork chops on both sides 4 minutes, or until golden and the internal temperature of the pork has reached 145 degrees. Transfer the pork chops to a plate and set aside.
Reduce the burner to medium heat. Add the ghee to the same pan, scraping up the browned bits from the bottom of the skillet.
Add the garlic cloves and sauté for 30 seconds, or until fragrant.Add the honey, water, red pepper flakes, and vinegar to the pan. Increase the heat to medium-high and cook stirring occasionally, for a couple of minutes, or until the sauce has reduced and thickened.
Return the pork chops back to the pan and baste with the pan sauce.
Place the pork chops in the oven and broil for 1 minute, or until edges are slightly charred and color is golden brown.
Garnish with chopped cilantro if using.
