Blue Cheese Burgers with Bourbon Caramelized Onions
Delicious grilled beef burgers with the flavor of bourbon in the burger and the caramelized onions. The contrast of sharp and tangy blue cheese crumbles makes the perfect compliment to the sweet onion topping.
Melt butter in a large skillet over low heat until bubbly. Add onions and stir to coat with butter. Cook over low heat for 20 minutes, stirring occasionally.
Once onions are softened, add brown sugar and bourbon and simmer until liquid has evaporated. Set aside and use for burger topping upon assembly.
In a large bowl, gently mix the ground beef, bourbon, Worcestershire sauce, salt, and black pepper (if using) until combined. Shape into ⅓ pound patties and press a slight dent in the center of the beef.
Place shaped burgers on grill that has been preheated to 350 degrees. Place burgers on grill and lower lid. Cook burgers until just about ready to remove from the grill.
Place two tablespoons of crumbly blue cheese in well of burger. Lower lid and cook another 30 seconds to warm cheese on top of burger. Remove from grill and let set 10 minutes prior to serving.
Garnish burger with caramelized onions, lettuce and tomato if desired.
