extra-virgin olive oil

dried oregano

tablespoon
tomato paste

beef broth

whole peeled tomatoes
with their juice

rinsed and drained
Instructions
Heat the olive oil in a large stockpot over medium-high heat until hot. Add the ground beef and chop with a spoon to crumble.
Cook the beef until it begins to brown. Add the onion and garlic. Cook for 3 minutes more, or until the onion has softened and the beef is browned.
Stir in the chili powder, cumin powder, chipotle powder, oregano, salt, and pepper. Cook stirring occasionally for 2 minutes.
Add the beef broth to the beef mixture and stir to combine. Stir in the beans and tomatoes. Bring to a boil. Add the tomato paste and stir to combine.
Reduce the heat and simmer for 30 minutes, or until the chili has thickened.
