Instructions
Pre-heat oven to 350 degrees. In a large mixing bowl, add brown sugar, banana, mayonnaise, and rum and mix with a hand mixer until well blended.
In a medium sized bowl combine flour, oats, coconut, raisins, walnuts, baking powder, cinnamon and nutmeg.
Add dry ingredients to wet ingredient mixture and stir until just combined.
Drop dough using large cookie scoop (about ¼ cup of dough) on parchment lined cookie sheet. Bake at 350 for 19-22 minutes. Cool completely.
