Bacon Cheeseburger Meatloaf Muffins are a cupcake sized meatloaf that is perfect for portion control. These delicious mini meatloaves are also perfect for parties and make great sandwiches with any leftovers.
Pre heat oven to 350 degrees F. Spray muffin tin with non-stick cooking spray.
In a large bowl, combine meat, pickles, pickle juice, onion, bread, egg, and cheese until well combined.
Fill muffin tin with ½ cup of meat mixture and press down into prepared muffin tin to pack well.
In a small bowl, combine the ketchup, mustard, brown sugar substitute (if using) and worcestershire sauce. Evenly spoon ketchup mixture over top of the meatloaf mixture and top of the meatloaf muffins with bacon pieces.
Place muffin tin in oven and bake 30 minutes in preheated oven, until internal temperature of meat is 160 degrees.
