Place the tahini in a medium sized mixing bowl. Whisk in the water, lemon juice, olive oil, salt, pepper, and garlic cloves. Refrigerate in an airtight container up to 1 week.

Tips and Recommendations
Make sure the tahini is at room temperature and stir it well before measuring.
Be sure to use fresh garlic cloves. The flavor will not be the same if you substitute powder.
Spice the tahini dressing up a little with a few pinches of cayenne pepper or cumin.
Buy good tahini. My favorite brand is found at Trader Joe's, but if that is not available to you, then this is my next go to brand.
Hot water will help to emulsify the ingredients and fresh lemon juice helps to thicken the dressing.
