Ingredients

Smart Balance Crunchy Peanut butter

spelt flour

baking soda

maple syrup

vanilla extract

vegan chocolate chips
Instructions
Preheat oven to 375°F. Line cookie sheet with parchment paper.
Place peanut butter in a microwave-safe bowl and cover bowl with a paper towel.
Heat peanut butter on high power for 30-45 seconds, or until the peanut butter is melted, stirring once or twice as it heats.
In large bowl stir together spelt flour, baking soda, and salt.
Add melted peanut butter, maple syrup, and vanilla. Stir until blended. Fold in the chocolate chips.
Using a large cookie scoop, drop cookie dough onto the prepared baking sheet. Flatten slightly.
Bake 15 minutes, or until golden brown around the edges. Cool cookies 5 minutes on the cookie sheet.
Transfer cookies to a wire rack and allow them to cool completely.
