dried black-eyed peas
, rinsed well

meaty smoked ham hock

cajun seasoning
Instructions
Rinse the black-eyed peas and sort through them, removing any small stones or debris.
Place all ingredients except the cajun seasoning in the slow cooker and stir to combine.
Cook on high for 6 hours or low for 8 hours.
During the last hour of cooking, stir in the cajun seasoning.
Remove the ham hock and separate the ham from the bone. Discard the bone and return the meat to the black-eyed peas.
