Place chocolate chips in a large microwave-safe bowl. Place in microwave and heat on high for 30 seconds. Remove chocolate from the microwave and stir. Return in 30 second intervals until chocolate is melted, stirring in between each interval.
Add softened cream cheese to the melted chocolate and mix with an electric mixer on medium speed until smooth.
Stir in 3 ½ cups powdered sugar and mix until well blended.Turn truffle mixture into prepared baking dish and press into a square. Cover with plastic wrap and place in the refrigerator to chill up to one hour.
Remove chocolate mixture from refrigerator. Cut into squares 48 small pieces and roll into ball shape. Coat each truffle with cocoa powder, powdered sugar, or sprinkles.
Store in refrigerator in an airtight container. Remove from fridge at least 10 minutes to bring to room temperature prior to serving.
