In a large mixing bowl, combine the boiling water and whole oats. Set aside for 1 hour.
Add the maple syrup, yeast, and oil to the cooled oatmeal mixture and stir to combine. Add 3 cups of flour and salt. Stir to combine. The mixture will be a loose dough.
Stir in remaining 2 cups of the flour until the dough takes shape.Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until the dough becomes smooth and elastic, adding more flour as needed to prevent sticky dough.
Place dough in a lightly oiled bowl and cover it with a damp cloth or plastic wrap, and let dough rise in a warm place for 1 hour.
Punch dough to release any air bubbles. Divide dough in half and shape it into 2 separate loaves. Place the shaped dough in a loaf pan lightly coated with cooking spray.
Cover the pan with a cotton kitchen towel and let dough rise again for 1 hour (this is the second rise).
Preheat oven to Bake the bread in the preheated oven for 40 minutes or until the top turns golden brown.
Remove the bread from the oven and allow it to cool on a wire rack before slicing and serving.
