In a large sauce pan, whisk together the sugar, cornstarch, coconut milk, and milk until smooth.
Whisk in the egg yolks until fully incorporated into the milk mixture. Cook pudding mixture in a heavy bottomed pan over medium heat until mixture begins to boil. Boil for 1 minute, whisking constantly.
Remove from heat and add the butter and coconut extract. Stirring until well combined.
