Delicious and super easy to make Buffalo Chicken Burritos make a great lunch or game day sandwich. They can be enjoyed hot or cold, grilled or not, and are packed with protein and flavor that will please buffalo flavor fans.
In a large bowl, combine the shredded chicken, hot sauce, and melted butter until chicken is thoroughly coated.
To assemble the burrito
Lay 1 tortilla on a flat surface and ⅓ cup buffalo chicken mixture in center of each tortilla.
Top with ¼ cup spanish rice, and evenly distribute Monterey jack cheese, blue cheese crumbles and lettuce over top of chicken and rice.
Fold the short side of tortilla closest to you up and over, packing the filling in. Fold each side of the tortilla up over the top of the first roll. Continue to roll tortilla to enclose filling, pushing sides of tortilla in to completely enclose filling.
Cut burritos in half (if desired) and serve hot or cold.
