Cut zucchini into 3x1"strips. Place on a paper towel lined baking sheet and sprinkle lightly with salt. Let sit for 10 minutes to allow excess moisture to escape.
In a large mixing bowl, whisk the egg until foamy.In a shallow mixing bowl, combine the panko crumbs, Italian seasoning, black pepper, and garlic powder. Stir to combine.
Toss the zucchini fries in the egg mixture. Using a slotted spoon, remove the zucchini from the egg mixture and place in the panko mixture. Toss to coat.
