In a skillet over medium heat, add oil, onion, ground ginger, and garlic. Sauté for 3 minutes, until onions are translucent.
Place potatoes and carrots in the onion mixture and sauté for 10 minutes, until soft. Add the remaining spices and peas to the potato mixture and sauté for 3 minutes. Set filling aside.
Roll out the samosa pastry and divide it in half. Lightly dust a flat surface with cornstarch. Place ½ of the samosa dough on the cornstarch. Roll out until the dough is ⅛” thick. Repeat with remaining ½ of the dough.
Using a 6” circle dough cutter, cut out 5 circles of dough. Set aside. Repeat with remaining dough.
Cut a circle in half and a shape into a cone, wetting flat sides with water so they adhere together. Fill the cone with filling and pinch the cone shut. Repeat for all circles.
Place filled veggie samosas on parchment paper inside the air fryer basket in a single layer, spray with oil and air fry samosas at 350°f for 6 minutes, flip samosa and spray with oil spray, then cook for 6 minutes more.
