Thick cod fillets are topped with a seasoned crushed cracker topping. These cook quickly in the air fryer making it a meal on the table in under 20 minutes!
Place the entire sleeve of crackers in a quart size ziploc bag. Add the parsley, garlic powder, salt, and pepper. Coarsely crush the crackers and seasoning together. Transfer the cracker mixture to a small bowl.
Melt the butter in a glass measuring cup in the microwave for 30 seconds, or until just melted.
Stir the lemon zest into the butter and pour the butter mixture over top of the cracker mixture. Stir until well combined.
While preparing the fish, Preheat the air fryer on 400 degrees.
Place the fish fillets in the air fryer basket or air fryer tray. Using a tablespoon, place the cracker topping on top of the cod fillets. Press lightly to pack the topping on the fish.
Cook the fish on the bottom rack of the air fryer for 10 minutes, or until the internal temperature reaches 145 degrees.
Remove the fish from the air fryer and serve with lemon wedges.
