Create delicious vegan Millet Meatballs using cooked millet, ground nuts, and sunflower seeds. Packed with flavor and nutrients, they're perfect for a plant-based meal
In a large pot over medium-high heat, cook the millet according to package instructions. Once millet is cooked, allow it to cool completely before proceeding.
Use the food processor to grind the pecans and sunflower seeds. Transfer nut mixture to a medium bowl.
Add the millet, salt, pepper, paprika, bread crumbs, chicken flavored seasoning, and onion powder to the ground nut mixture.
Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
Shape into tablespoon sized balls.
Place millet meatballs on prepared baking sheet and bake for 20 minutes, turning meatballs over once halfway through cook time, until golden brown.

Mom's notes: She bakes them just a little longer than 20 minutes as Dad likes these to be a little crispier. She does not recommend putting these into a sauce as they will fall apart if you do. Just serve them on the side. They are also good with a little cheese sauce and very good for you!
