Season the pork chops with salt, pepper, and garlic powder.
Heat the olive oil in a cast-iron skillet over medium-high heat until hot. Sear the pork chops on both sides 4 minutes, or until golden. Transfer the pork chops to a plate and set aside.
Reduce the heat to medium. Add the ghee to the same pan, scraping up the browned bits from the bottom of the skillet.
Add the garlic and sauté for 30 seconds, or until fragrant.
Add the honey or sugar-free maple syrup, water, red pepper flakes, and vinegar. Increase the heat to medium-high and cook stirring occasionally, for 3 minutes, or until the sauce has reduced and thickened.
Return the pork chops back into the pan and baste with the honey sauce.
Place the pork chops in the oven and broil for 1 minute, or until edges are slightly charred.
Garnish with chopped cilantro if using.
