Ingredients

4 ounces each boneless skinless chicken breast

olive oil

diced onion

minced garlic cloves

14.5 ounce can diced tomatoes with chipotle peppers
Instructions
Heat oll in a large skillet over medium heat.
Add onion and garlic and saute until onions are translucent
Place chicken in skillet and season with salt and papper. Cook the chicken for 2-3 minutes on each side, until lightly browned.
Add the tomatoes and cook until sauce begins to boil. Turn the head down and simmer chicken for 30 minutes, or until chicken no longer pink inside.
