Measure 2 cups of coconut flakes and place in blender. Whiz until fine (about 6-7 pulses).
Place cream cheese, 2 cups of ground coconut flakes, vanilla extract, 1 package of matcha tea powder, and 1/3 cup Swerve Powdered Sugar in mixing bowl.
Using hand mixer, blend for 1-2 minutes or until combined.
Place in refrigerator to allow cheese mixture to stiffen. About 30 minutes.
Shape into 12 equal sized balls. Roll in remaining 1/2 cup coconut with 1/2 packet of Matcha Tea Powder combined.
Store in airtight container in refrigerator, up to 1 week.
