Cut hard boiled eggs in half lengthwise and remove egg yolks, placing egg yolks in a medium bowl and egg white halves on a egg plate. Set egg whites aside.
Mash yolks using a fork, until yolks are fine crumbles. Add mayonnaise, shrimp and chives to mashed yolks.
Using a tablespoon, fill egg white halves with approximately 1 tablespoon of egg yolk mixture.
Sprinkle the tops of the deviled eggs with bacon pieces and a little more chive if desired.
