Christmas Crack is a sweet and salty cracker candy made with saltines, toffee and chocolate and decorated with sprinkles or your favorite toppings. It is perfect for holiday gifting and cookie trays.
Line a large jelly roll pan with parchment paper or silicone baking mat.
Fill the pan with crackers in a single layer, if you need to, break some crackers to fill in all the spaces. Set aside.
Melt the butter in a medium saucepan over medium heat. Add brown sugar and vanilla, stirring to combine. Cook mixture until it reaches 270° f on a candy thermometer.
Once temp is reached, remove from heat and pour toffee mixture over crackers on the baking sheet. Using an offset spatula, spread toffee mixture over every cracker.
While toffee is still hot, top with chocolate chips and let sit for a few minutes, until chips have begun to melt down.
Using an offset spatula, spread the melted chocolate over the toffee, covering the toffee and crackers. Immediately top the chocolate layer with holiday sprinkles.
Place in fridge for 1 hour to fully harden the chocolate and toffee.
Remove and break the cracker into random pieces or use a knife to cut the pieces evenly.
