Making stuffed peppers in the air fryer is an easy and delicious way to make dinner. Whole peppers are stuffed with a tomato meat mixture and topped with cheese.
Prepare the peppers by cutting the tops off and removing the core and seeds. Wash and dry the peppers and set aside.
Heat 1 tablespoon olive oil in a large skillet over medium high heat until hot. Add the onions and cook for 3 minutes, stirring often, until onions soften.
Add the ground pork and ground beef and cook, chopping meat into small pieces while cooking for 7 minutes, until meat is browned.
Stir in the Italian seasoning, garlic powder, salt, and pepper. Add the tomatoes and tomato paste stirring to combine.
Add the cooked rice and stir to incorporate.
Using a spoon, fill each bell pepper with the meat mixture then place the stuffed pepper in the air fryer basket, leaving space between each pepper to allow hot air to circulate around the peppers. Cook at 400 degrees for 10 minutes.
Remove the peppers from the air fryer and sprinkle cheese over each pepper.
Return the air fryer basket to the air fryer and cook at 370 degrees for 2 minutes, until cheese is bubbly and begins to brown.
Remove the air fryer basket and set aside to cool for 10 minutes. Using a long handled spatula, remove the peppers from the air fryer to serve.
