Heat the olive oil in a large skillet over medium high heat. Add the onion and carrot, and garlic. Cook and stir for 3 minutes, or until the onion begins to turn translucent.
Add the cauliflower rice and stir. Cover and cook for 5 minutes without stirring. Remove cover and stir. Continue to cook uncovered for 5 minutes, or until the cauliflower is tender and has lightly browned.
Stir in the lime juice, cilantro, and lime zest. Season with salt and pepper.
