Ingredients

olive oil

green onion
diced

ounce
cheddar cheese
shredded

tablespoon
cilantro
chopped

tablespoon
tomato
diced

tablespoon
tomatillo or regular salsa

slices
pre cooked turkey bacon
chopped

flour tortillas
Instructions
In small skillet, saute onion for 1 minute, or until soft.
Add the eggs and scramble for 2 minutes, or until no longer wet.
Add cheese, salsa, cilantro, and bacon to egg mixture.
Divide up mixture between two tortillas that have been warmed in the microwave. Roll and eat or store in container until ready to re-warm and eat!
