In a large bowl, combine the apple juice, chicken broth, rosemary, garlic, salt, and apple cider vinegar. Set aside.
Prepare the pork loin
Pat the pork with paper towels to remove any wetness from the exterior. This makes it easier to handle when tenderizing. Using a Jaccard tenderizer or a fork, pierce the pork loin over the entire outside of the pork. This helps the brine to get deep into the roast.
Place pork loin into the bag and pour brine over top of the pork; allow it to sit in the refrigerator at least 2 hours, turning it several times, “massaging” the brine into the pork.
Make the glaze
In a small saucepan add the maple syrup, apple juice, rosemary, and salt over low heat. Bring to a boil, then simmer, reducing mixture by half, or until a thick enough consistency to coat the back of a spoon. Remove from heat and set aside. This should take from 5-10 minutes.
Air fry the pork loin
Remove pork loin from the brine and pat it dry using paper towels.Place pork in a parchment paper-lined air fryer and coat with a small amount of olive oil.
Air fry at 360 for 15 minutes fat side down, flip pork loin over and continue to cook at 360 for another 15 minutes with the fat side up. Using an instant-read thermometer, check the internal temperature to gauge where the pork is at with cooking time. Flip loin one more time and brush with ½ of the glaze.
Turn air fryer temperature down to 250 degrees and cook for about 10 minutes to allow glaze to caramelize on the loin, adding the additional ½ of the glaze after 5 minutes. If glaze looks like it is getting too dark, turn down the air fryer temperature. If you want more color on the loin turn temperature up to 400 and cook an additional minute or 2.
Check internal temp of pork, aiming for a finished temperature of 145 degrees F.
Remove pork loin from air fryer basket and place on a cutting board. Create a tent foil and cover the roast and let meat rest for at least 5 minutes before slicing.
Notes
Because AirFryers will vary, it is recommended to follow the cooking instructions closely. If your pork loin internal temperature is not at 145 degrees after the end of initial cooking time, then add time in 5-10 minute intervals, checking the temperature after each interval until your roast has reached the safe internal pork cooking temperature.
