Cinnamon Sugar Donut Muffins
You will need just a few simple ingredients to make this easy muffin recipe. As you will see, these pantry ingredients will come together to make a tasty morning treat!

- All-purpose flour
- Granulated sugar
- Baking powder
- Baking soda
- Salt
- Vanilla extract
- Greek yogurt
- Butter
- Ground cinnamon

Sift dry ingredients into a large bowl.
Mix together wet ingredients, then add dry ingredients and stir to combine.
Fill paper liners with muffin batter and bake.
Remove from oven and coat tops of muffins with butter and cinnamon sugar.
- Preheat oven to 350 degrees F. Line a standard 12 cup muffin pan with muffin liners. In a large bowl, whisk together all purpose flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together eggs, yogurt, sugar, oil, and vanilla extract. Add flour mixture to wet ingredients and mix with light strokes until the dry ingredients are just moistened.
- Divide muffin batter among the paper liners and bake for 12-15 minutes, until a toothpick inserted in one or two of the muffins come out clean.
- While the muffins are baking, melt butter and place in a bowl just large enough to hold a muffin. In a small bowl, combine granulated sugar and ground cinnamon. Dip top of the muffins one at a time in the melted butter and then roll in the sugar mixture. Set on wire rack to dry.
Hint: dip the tops of muffins in the melted butter and cinnamon sugar mixture while the muffins are still warm.
Substitutions
This is a pretty basic recipe with simple ingredieints that you likely have in your pantry. Below are some substitutions for ingredients that can be made without affecting the out come of the recipe.
- Sour cream - instead of greek yogurt
- Smart Balance Margarine - if trying to keep healthy fats in your diet, use this in place of butter.
- Pumpkin spice - substitute pumpkin pie spice for the cinnamon.

Try these different ways of changing up this muffin recipe to your own liking!
- Mini muffins - use a mini muffin pan to make mini donuts coated in buttery cinnamon sugar!
- Apple filled - partially fill the muffin cup with muffin batter then add a tablespoon of apple pie filling before topping the muffin cup off.

Equipment
You will need mixing bowls, mixing spoons, rubber scraper, and a 12 cup pluse 6 cup muffin pan. (this recipe made 15 muffins for me). Parchment paper liners work great for this recipe a the muffin does not stick to the liner.
I highly recommend using ยผ cup scoop works great for equal portioning of the muffin batter into the muffin tin.
Storage
Room temperature: store the homemade muffins in an airtight container up to 4 days.
Freezer: baked muffins can be stored in a freezer safe container up to 3 months.
Reheat: warm thawed muffins in the in the oven at 350 degrees or for a few seconds in the microwave until warmed through.
Top tip
For a muffin bursting with cinnamon sugar flavor, make these mini doughnut style and bake in a mini muffin pan without paper liners. Toss warm mini muffins in the melted butter then coat entire muffin with cinnamon sugar mixture.
