🥘 Ingredients for BLT Bites
Cherry tomatoes: choose ripe tomatoes that are firm when gently squeezed; you want the freshest tomatoes possible for this blt appetizer.
Thick-cut bacon: be sure to cook bacon until crispy, using thick cut bacon offers more substance to the filling.
Green onions
Fresh parsley
🔪 Instructions
- Cut a thin slice off the bottom of the tomato so it will stand still on the serving plate.
- Cut another thin slice along the top of the tomato and using a small spoon, scoop out the pulp, membrane, and seeds from the tomato.
- Invert tomato over a paper towel to drain.
- In a small bowl, mix the mayonnaise, parmesan cheese, bacon, white part of the green onion, parsley, and chipotle chili powder.
- Fill hollowed out tomato with bacon filling and arrange on a serving platter with romaine lettuce leaves. Chill until ready to serve.
- Prior to serving, garnish blt salad bites with a sprinkle of parsley or the green part of the green oniion.

📖 Variations
Low fat option: substitute crispy cooked turkey bacon in place of the thick cut bacon and use a light mayo in place of regular.
Vegetarian option: substitute bacon bits (made with vegetable protein) with diced pieces swiss cheese for a vegetarian friendly option.
Buffalo Chicken BLT Bites: Mix finely shredded cooked chicken into the filling with a tablespoon of buffalo sauce for a spicy kick. Fill the tomatoes with this mixture, and top with crumbled blue cheese and a small piece of crispy bacon.
💭 Tips
- Use firm, ripe cherry tomatoes to ensure they hold their shape when stuffed.
- Hollow out the tomatoes carefully to avoid piercing the skin.
- Crispy bacon adds a delightful crunch to the filling, I love to make my bacon in the air fryer for the perfect fry.
